The Avocado Smoothie.

If my Hollywood gossip mags are correct (and I know they always are), these healthy smoothies have been popular with the rich, famous, and beautiful for years now.

So I guess I’m a little late to the picnic, but here’s my discovery for all non-celebs who may think an Avocado Smoothie sounds a little strange: this healthy breakfast or snack idea is actually pretty amazing.

For several reasons:

1.) It just so happens to be an extremely healthy (vegan!) treat that takes minutes to throw together.

2.) The rich texture is satisfying and filling (it’s so thick, you can eat it with a spoon).

3.) The creaminess of the avocado combined with fruit and berries is so tasty, you’ll probably find you don’t need to add any sugar or other sweetener.

4.) If the research linking healthy, whole eating and better, younger looking skin is true, this smoothie should help transform your skin. Here are the five ingredients you’ll need to make your own avocado smoothie (along with all the anti-aging, smooth skin benefits of each ingredient):

1.) Avocado - full of monounsaturated fats that help the body absorb vitamins (like Vitamins A and E) crucial for soft, smooth, young skin

2.) Lime – packed with antioxidants that slow down the aging process in skin

3.) Coconut Milk – rich in lauric acid and antibacterial properties that keep skin clear and breakout free

4.) Mango – Rich in Vitamins A and E, vitamins that keep skin healthy and youthful

5.) Strawberries – full of Vitamin C to reduce inflammation that can damage skin tissue

Begin by grabbing a lime and slicing it in half.  Squeeze all the juice from both halves into a small bowl (it’s easier to find and discard any seeds this way).

If you don’t have a fancy citrus juicer, just twist a fork through the halves to get out every last drop of juice.

Next, grab an avocado and cut all the way around it lengthwise.

You won’t be able to slice the avocado in half because your knife will hit the pit in the center.

Just grab hold of both sides and rotate each in an opposite direction to pull apart the avocado.

Use a spoon to remove the pit.

Then use the spoon to scoop all the fruit from the skin.

Add the avocado and lime juice to a food processor.

Also add a bit of coconut milk and some thawed, frozen chopped mango and thawed, frozen strawberries.

(Just throw the frozen mango and berries in the microwave for a couple of minutes to quickly thaw).

Pulse until you have a thick, smooth, creamy purée.

One batch makes 4 smoothies, so you can store the rest in the fridge or freezer for a quick and convenient breakfast or snack anytime.

You probably won’t actually taste the avocado (the smoothie tastes mainly like berries and mango with just a hint of coconut), but you will notice the creaminess.

Here is the complete recipe (I include two recipe options: the first version has more strawberries for a tart, berry flavor. The second version has more mango for a creamier tropical flavor):

Option 2 Ingredients: Mango-Flavored Smoothie
  • 1 avocado, halved, peeled and pitted
  • 1 lime, juiced
  • ½ cup coconut milk
  • 24 ounces frozen chopped mango, thawed
  • 8 ounces frozen strawberries, thawed

Instructions
  1. Select ingredient list for either Option 1 or Option 2.
  2. Place all ingredients for Option 1 or Option 2 in a food processor.
  3. Puree until smooth and creamy.
  4. Serve.

Watermelon Basil Soda Pop

My goal toward healthy, whole eating has been, at best, a daily struggle (hello irresistibly cheesy takeout pizza and Peanut Butter Chocolate Swirl from the ice cream shop down the street).

But here’s one thing I can say we’ve done well in our household: Our refrigerator hasn’t been stocked with so much as one bottle of processed, artificially flavored soda (Coke, Pepsi, Sprite, etc., etc.) in a long, long time.

I can’t remember the last time we bought soda.

My husband Chris and I mainly just drink water.

Plain old water does get boring though.

So recently I decided to make a fresh, summery homemade soda pop.

Full of fresh basil and watermelon, it’s a nutritious drink you can feel good about.

And it definitely offers a sweet, refreshing, flavorful break from plain old water.

Bonus: this drink just tastes like summer!

Here are the only four ingredients (yes, only four ingredients!) you’ll need for this recipe.

Begin by scooping out all the fruit from half of a seedless watermelon using a large spoon or melon baller.

Watermelon is made up of mostly water, so it makes perfect sense to use in a flavored summer drink.

But it also makes for an extremely nutritious drink  - watermelon contains a lot of Vitamin A (to protect your vision), Vitamin C (for a strong immune system), Lycopene (to help prevent cancer), and Potassium (for a healthy heart).

Place the watermelon in a food processor and pulse until it’s completely puréed.

You may need to work in batches to purée all the fruit.

Place a fine mesh strainer over a large bowl and pour the puréed melon through the strainer.

The strainer will catch any pulp and seeds – discard them.

Pour the strained watermelon juice into a large pitcher.

Add some fresh basil leaves.

Use a wooden spoon to press the basil against the bottom of the pitcher, releasing the basil flavor throughout the drink.

Add some sparkling water.

If you’re like me, you’re finished here!

I like my watermelon soda just like this, with just the slightest hint of sweetness from the watermelon.

But if you’re more like my meat-and-potatoes-guy and you like your soda pop the traditional way (i.e. a lot sweeter!), add some 100 percent pure pear juice for extra sugary sweetness.

Stir everything one last time and then pour into glasses and serve.

Side Note: because of the extremely fresh ingredients, this drink is best served immediately, not stored.

This fizzy drink has a lot of watermelon deliciousness, with a hint of sweet, fresh basil flavor.

Refreshing and unique.

Summer in liquid form.

One sip and you’ll feel pure,nostalgic, ‘hot-and-humid-last-day-of-school-before-summer-vacation’ joy wash over you.

Watermelon and Basil Soda Pop

Yield: 6 (about 6 cups)

Ingredients

1/2 seedless watermelon
2 cups sparkling water
3/4 cup 100 percent pure pear juice (optional)
1/4 cup fresh basil leaves

 

Directions

Using a large spoon or melon baller, scoop the flesh of the watermelon into a food processor.  Pulse until the melon is completely pureed. (Depending upon the size of the food processor, this may be done in batches.) Place a fine mesh strainer over a large bowl and pour the puréed melon into the strainer. Strain and discard any seeds or pulp.  Pour the watermelon juice into a large pitcher.  Add the fresh basil leaves and use a wooden spoon to press the basil against the bottom of the pitcher, crushing the basil and releasing its flavors.  Stir in the sparkling water.  For added sweetness, also stir in the pear juice.  Serve immediately.

‘Island Escape’ Superfood Smoothie

I love this smoothie for many reasons.

First, it has a rich, creamy, slightly sweet, and overall really delicious flavor.

Second, it’s packed full of superfood ingredients so I feel like I’ve started my day off in the right direction.

Third, my mind always takes me on a relaxing 5-minute Puerto Rican vacation whenever I have one.

I do have my head in the clouds way too often, but in this case I have an excuse: this white and frothy smoothie features lots of tropical deliciousness including pineapple, coconut milk, and bananas.

The beachy, pina-colada-ish flavors instantly transport you to some fantasy island with turquoise water, palm leaves swaying in ocean breezes, and sun-warmed sand under your bare feet.

Just take a look at this line-up of incredibly good-for-you ingredients.

Who knew that such a retro (my Google search just informed me that the ‘Pina Colada Song’ is now 32 years old!) beach drink could be transformed into a high-powered superfood breakfast concoction circa 2012! Everything old is new again, right?

The preparation couldn’t be any easier (it takes all of 2 minutes), so it’s perfect for busy mornings. (There goes your excuse to skip breakfast!)

Simply throw all of the following ingredient all-stars into a food processor:

Plain nonfat Greek yogurt – excellent source of calcium, protein, and probiotics.

Bananas – tons of potassium to protect your bones and heart.

Frozen pineapple – overflowing with Vitamin C to support your immune system.

Vanilla extract – adds flavor so you don’t feel the need to add sugar.

The next ingredient deserves some discussion.  Coconut milk is a superfood with an air of controversy.  It has many nutrients but it’s also high in saturated fat, which we know is linked to heart disease.  Although we know we need to limit consumption of saturated fats, many argue that the fat in coconut milk, lauric acid, is actually healthy.

Lauric acid is antimicrobial and believed to support the immune system.  It also may help raise good cholesterol levels.

Also found in coconut milk: Copper and vitamin C for healthy and clear skin, lots of dietary fiber to help you feel full with just a small serving, and potassium to help lower blood pressure.

The overall consensus seems to be that coconut milk offers a lot of health benefits and is a smart choice, as long as it’s carefully portioned and consumed only in moderation.

The last key ingredient is ground flaxseed. Have you jumped on the Omega-3 bandwagon and tried it yet?

Flaxseed is packed with Omega-3, so it protects eye and bone health and fends off heart disease, cancer, and diabetes.  It’s also rich in fiber to help make the smoothie that much more filling.

This is an optional ingredient.  If you choose to use it, start out with just a couple teaspoons and you won’t actually taste it in your smoothie.

Pulse all ingredients until the mixture is smooth and well-blended.

Pour into tall glasses and serve.

This smoothie is incredibly delicious.  It’s extremely thick and rich.

And the combo of rich Greek yogurt and creamy coconut combined with pineapple – for a little tartness and a little sweetness – is so flavorful.  ”If you like Pina Coladas…”, try this 2012 superfood version.

2 bananas
2 teaspoons vanilla extract
1/2 cup coconut milk

Combine all ingredients in a food processor and pulse until mixture is thick, creamy and smooth.  Pour into glasses and serve.
